How do I clean it?
Wash the pot, basket, rack and tongs in warm soapy water. Unscrew the wooden handle first and wipe it with a damp cloth. Don't soak the handle.
Can I close the lid while frying?
No. Only put the lid on once the oil has fully cooled, to cover it or to store food.
